The health benefits of garlic are widely known, but because of its equally well-known and somewhat antisocial malodorous side effects, most people shy away from consuming it in large quantities. Even when the dry extract is added to dietary supplements, the familiar odour is usually still present. However, when fresh garlic is fermented and becomes black garlic, it loses its undesirable odour yet retains its health benefits. Indeed, black garlic actually has greater antioxidant activity than its fresh counterpart. How many health claims can a food company afford?
The functional food market is stagnating: Following great initial success, in Germany the share of products with additional health benefits has remained constant at around 4.5 billion euros since 2006, according to the consultants IBH Retail. Since the Health Claims Regulation (HCR) went into force in 2007, foodstuffs may only be sold with health-related advertising claims if they are scientifically proven, for which long transitional periods apply, as are still in effect today. Health claims are investigated in advance by the European Food Safety Authority (EFSA) for their truthfulness. The seminar on Special Health Claims held in March 2011 in Munich by the Z I E L–TUM Academy in cooperation with the Harrison Clinical Research and the Nutrition cluster, examined the topic from various perspectives – from the viewpoint of industry and business.
